’tis the season

- I made peppermint bark to take up north when we visit family for Christmas. Milk chocolate on the bottom…white chocolate w/crushed candy canes on top. It will hopefully be pretty once I cut it. Also found out the white chocolate chips I bought don’t really MELT, per se. They clumped up and got yucky and I had to throw them out and use the baking chocolate “bricks”, which worked wonderfully.
- I made soft shell tacos for dinner. They were yummy.
- I’m going to admit something I’m not necessarily proud of. I’ve found that one of my most peaceful and favorite parts of the day is when I get up early (before alarm clock or before naturally waking up for the day) and take my medicine (this doesn’t happen all the time, mainly on weekends when I get up to get a drink and then go back to bed). Within 20 minutes, my pain pill kicks in and I am completely at ease and I get the most wonderful hour or two of sleep after that point. It’s like my whole body and brain relax and I can just…sleep. Without pain and without agitation and without my mind wandering for hours. It’s the one point where everything is at peace…myself and the world around me. It’s sad that’s drug induced…
- I have high aspirations for our financial stability for next year. I’ve got a budget set for the first 2 months and I hope I can stick to it. I want next year to be better than this year was. My goal is work towards paying off our debt so that we can live off of one income (Dave’s) and have everything that I make be extra to put into savings or whatnot. We’re a long ways from that, though.
- I still have to make chocolate covered pretzels to take up north for Christmas. I don’t think I’ll be doing that tonight…but it’s gotta be done before Wednesday when we leave. I think Dave’s gonna help, so it shouldn’t take long…we only need enough to fill up a few containers.
